The maximum value of items that you can steal depends from you pickpocket value and level. The generic formula is value_max = lvl * (60 + (pickpocket * 12)).
The maximum weight does not increase past 5.
The value of the item stolen is the value of that item before Bartering so if you then sell that item without any Bartering or Attitude then you will get roughly 37% of that amount, making it far more efficient to just steal Gold; however, if you pickpocket an item that you might've bought then stealing it is 170% more efficient than stealing gold.
The numbers listed represent the maximum amounts for the sum of all items stolen. That is, if you have 5 pickpocketing at level 6 and steal a ring that weighs 0.05 and is worth 620 then you can still steal up to 4.95 weight and 100 worth of items.
